This focaccia club sandwich is super satisfying and incredibly tasty! We’ve layered an onion omelet between slices of soft focaccia bread, and it’s a fantastic match. This recipe makes a full meal, and we’ve added some extra cheese and veggies to make it even more satisfying.

Ingredients

4 small focaccias (buy them in the store or make your own homemade focaccia, here’s our recipe for focaccia)
3 eggs
2 small or 1 large red onions
Parmesan cheese
Arugula
2 tomatoes
Garlic oil, pepper, and salt according to taste (here’s our recipe for garlic oil)

How to make it?

When it comes to crafting this delicious focaccia club sandwich, follow these simple steps for a real treat! Begin by chopping the onions and tomatoes. Then, whisk the eggs in a bowl.

Heat a baking pan over medium heat and add some oil. Bake the onions for a few minutes, then add the egg mixture to the pan. After a few minutes, slice the eggs into 4 portions and flip them. Continue baking for a few more minutes and don’t forget to top them with grated parmesan cheese.

Now let’s assemble your focaccia club! Carefully cut the focaccia in half and add some arugula on top. Next, place the the baked eggs and tomato on top. Season it with some pepper, salt, and a drizzle of garlic oil. Finish your sandwich by placing the top half of the focaccia on. Enjoy!
