Boerencake (translation: farmer’s cake loaf) is a basic cake recipe that is often made in the Netherlands. It’s a cake with a firm structure, that can hold other ingredients for example raisins and diced apples.

Ingredients
192 grams of sugar and 8 grams of vanilla sugar
200 grams of self-raising flour
4 small eggs or 3 big eggs
200 grams of butter
45 grams of milk

How to make it?
Preheat the oven to 160 degrees Celsius. Start mixing the butter and sugar in a bowl until it’s smooth. Add the flour, eggs, and milk and mix until it’s a smooth mixture. When you have to mix it by hand: add the eggs one by one. Add the mixture to a greased cake tin and place it in the oven for 60 minutes. Check whether the cake is done with a spike (it has to come out dry) or test the bounciness from the top.
