Recipe: Vegetarian Burrito

This time we made a vegetarian burrito with beans, vegetables, and cheese. This recipe is healthy, filling, and very tasty.

Burritos, most people love them, eat them and make them. However, most people don’t know what defines a burrito. Burrito comes from the word burro, which is Spanish for donkey. An exact origin story with this name is missing as there are too many and that’s not really what this post is about anyways.

The definition of a burrito is a folded tortilla filled with beans and more. That’s all there is to it so the variations you can make on this are endless. The point is though. They have a tendency of being damn tasty!

🍽 3 portions

Ingredients
400 grams of black beans
1 onion
3 spring onions
1 clove of garlic
6 tortilla wraps
1 teaspoon of cumin
1 teaspoon of paprika powder
400 grams of tomatoes
1 teaspoon of chile
1 teaspoon of coriander
cheese, lime, pepper, and salt according to taste

How to make it?
Start cutting the vegetables and add a baking pan to the stove at middle temperature. Start baking the onion and garlic. We usually grab a second baking pan to warm up the tortilla wraps. Bake them for a minute on each side. When the onion and garlic have turned a little brown you can add the tomatoes, spices, and herbs. Lastly, add the black beans, after they have been drained, the spring onions, and the lime according to taste. Grab a tortilla, and add some of the vegetable mix and cheese according to taste. Check the added picture on two examples of how you can fold the tortilla. Enjoy your vegetarian burritos!
