Since we always state that making a tasty, healthy meal isn’t hard we challenged ourselves to use fewer ingredients. The recipe we will share today is a healthy zucchini broccoli soup which is simple and quick (done in 10-15 minutes!). You can make this recipe with only 5 ingredients.

Ingredients
1 broccoli
1 zucchini
100 milliliters of coconut milk or 25 grams of the concentrated coconut that we used
1 cube of bouillon
1 teaspoon of curry powder
How to make it?
Cut the broccoli and zucchini into pieces and set 2 pans on the stove, one to make the broth in and a wok pan to bake the vegetables. Cook some water and add the bouillon cube in there. Turn the heat on the stove and bake the zucchini and broccoli for a few minutes until they turn a little brown. Add the curry powder when it’s almost done. Then add the vegetables to the broth add the coconut milk and let it cook for a few minutes. Mash the vegetables into a soup mixture with a blender or food processor and enjoy the healthy zucchini broccoli soup!
Tip: you can add some nutmeg to the mix and/or add some pumpkin and sunflower seeds as a crunchy topping when serving.
