Recipe: Broccoli Spinach Quiche

We often make quiche when we are meal prepping since we love to eat quiche and one quiche makes us two dinners. The recipe we will share is a broccoli spinach quiche. The recipe takes a bit of time to make, but it’s not difficult. This dish tastes amazing!

Ingredients
450 grams of spinach
1 broccoli
3 eggs
6 leaves of quiche or pastry dough (270 grams total)
100 grams of feta
1 red onion
1 clove of garlic
100 millilitres of oat milk
4 grams of curry spice mix/powder
Some cheese according to taste for the top of the quiche.

How to make it?

Preheat the oven to 200 degrees Celsius and start cutting the vegetables. Make sure the pieces of broccoli and leaves of spinach are not too big; I’d say bite-sized. Defrost the dough if it’s still frozen. Start baking the onion and garlic first. When these ingredients turn brown you can add the broccoli. Add the spinach when the broccoli has gained some color. You can make the sauce mixture in the meantime. Add the eggs, oat milk, feta, and curry herbs to a bowl and mix them together.

Grease the baking dish and start covering the bottom and sides with the pastry dough. Keep one leave (+/- 45 grams) of dough for the top. Add the sauce mixture to the pan after the vegetables are done and cooled down a little. Mix it together and add the mixture to the baking dish. Cover the top with the last of the pastry dough and add some cheese on top according to taste (Look at the picture above for an example of how to form this). This is not necessary, but we like to put some cheese on the dough. Don’t cover the whole top with cheese, since then the moisture can’t get out of the quiche. Place the baking dish in the oven and bake for 30-45 minutes depending on how warm the entire mix is. Enjoy this broccoli spinach quiche!
