Homemade Lemon Curd Recipe

Ingredients

5 egg yolks
200 grams of granulated sugar (¾ cup + 3 tbsp)
2 lemons (100 milliliters/¼ cup + 3 tbsp of juice)
125 grams of butter (½ cup + 1 tbsp)

How to make it?
  1. Grate the zest from the lemons and extract their juice, placing both in a bowl.
  2. In a saucepan, combine the egg yolks and granulated sugar, whisking until well incorporated.
  3. Over low heat, add the lemon juice and zest to the pan, stirring continuously.
  4. Continue stirring while gradually bringing the mixture to 84 degrees Celsius (183 F).
  5. Turn off the heat and add the butter in small pieces, stirring until fully absorbed.
  6. Allow the lemon curd to cool once the butter is fully integrated.
  7. Strain the mixture and transfer it into a jar for convenient storage.
