Spinach and Sun-Dried Tomato Spaghetti

Ingredients

400 grams of spaghetti
800 grams of creamy spinach (from the freezer)
2 cloves of garlic
2 onions
150 grams of herb cream cheese
180 grams of sun-dried tomatoes (drained weight)
20 grams of pine nuts
Parmesan cheese (to taste)

How to make it?
  1. Begin by cooking the spaghetti according to the package instructions. Enhance its flavor by adding a pinch of salt or a cube of stock to the boiling water.
  2. While the spaghetti is cooking, finely chop the garlic and onions.
  3. In a frying pan, toast the pine nuts over medium heat for a few minutes until they turn golden brown. Simultaneously, in another pan, sauté the onions and garlic.
  4. Slice the sun-dried tomatoes and add them to the pan with the onions and garlic once they’ve softened and have gained some color.
  5. Introduce the creamy spinach and cook for a few more minutes.
  6. Incorporate the herb cream cheese into the mixture, ensuring it blends well.
  7. Once the spaghetti is cooked to your liking, drain it and add it to the pan with the sauce.
  8. Gently mix the sauce with the spaghetti to combine the flavors and ingredients thoroughly.
  9. Serve the delicious pasta on plates, and top it off with Parmesan cheese and the toasted pine nuts for added texture and taste.
