Ingredients

For the dough:
500 grams of all-purpose flour
100 milliliters of olive oil
15 grams of baking powder
2 grams of salt
150 milliliters of lukewarm water

For the topping:
150 grams of goat cheese
200 grams of ricotta cheese
10 grams of pine nuts
8 dried figs, sliced
Approximately one tablespoon of honey
300 grams of fresh spinach

How to make it?

1. Preheat the Oven: Begin by preheating your oven to 180 degrees Celsius (356 F).

2. Prepare the Dough: In a mixing bowl, combine the flour, olive oil, salt, and baking powder. Add the lukewarm water and knead the mixture until it forms a smooth dough ball.

3. Divide the Dough: Divide the dough into 4 equal portions.

4. Roll Out the Piadina: Roll out each portion into a thin, round flatbread.

5. Cook the Piadina: Heat a frying pan over medium heat and bake each piadina for approximately 2 minutes on each side.

6. Assemble the Toppings:

  • Slice the dried figs.
  • Spread ricotta cheese over each piadina.
  • Add sliced figs, crumbled goat cheese, and a drizzle of honey on top.

7. Bake in the Oven: Place the piadina on the top oven rack and bake for 3-6 minutes, until the cheese is molten. If your oven has it, use the grill function: the Piadina itself is already done.

8. Sauté the Spinach: While your piadina is baking, cut the fresh spinach into pieces and sauté them in a frying pan with a bit of oil for a few minutes until they’re tender.

9. Serve and Enjoy: Once the piadina is ready, take it out of the oven and top it with sautéed spinach and some pinenuts. Slice and serve your homemade piadina with figs and goat cheese while it’s warm and delightful!
