Recipe: Upside-down Pineapple Lime Coconut Pie

We made an upside-down pie with pineapple, lime, and coconut. The taste of the pie reminded us of the Pina Colada Cocktail (minus the alcohol). This pineapple lime coconut pie tastes tropical and is perfect for the summer! You can find the recipe in this article.

Ingredients
For the bottom:

3/4 of a pineapple
50 grams (1/4 cup) of brown caster sugar
50 grams (small 1/4 cup) of butter
1 to 3 Limes

For the mix:
120 grams (small 2/3 cup) of white caster sugar
220 grams (1 cup) of Greek yogurt
120 grams (1 cup) of self-raising flour
80 grams (big 3/4 cup) of grated coconut
1 teaspoon of lime zest

For the top:
100 grams (1/2 cup) of brown caster sugar
100 grams of butter (small 1/2 cup)
200 grams (1 and 2/3 cups) of flour
1 egg

How to make it?

Begin with preheating the oven to 165 degrees Celsius (329 degrees Fahrenheit). Start by making the top by mixing all the ingredients until it’s a ball of dough. Spread the dough on baking paper in the shape and size of the cake tin. If you have 2 cake tins of the same size, you can bake the top in one of them and make the rest in the other. If you only have one like us, then you can make the dough the size of the cake using the cake tin. Put the baking paper with the dough on it in the fridge.

For the bottom

Start cutting the pineapple into slices. Put some baking paper on the bottom of the cake tin. Then spread the sugar on it. Bake the pineapple in the butter, for a few minutes on each side. In the meantime, you can start with making the mix.

For the mix

First add the coconut, flour, and sugar and mix it well. Then add the eggs one by one, when it’s all absorbed by the mixture you can add the Greek yogurt and lime zest.

Add the pineapple slices on top of the sugar in the cake tin. Finally, pour the leftover butter over it as well. The next step is to add the mixture on top. Put the cake tin in the preheated oven for 25 minutes, then add the top dough from the fridge on top of the mix, and bake for another 20 minutes. If you had put the dough in another cake tin, then you add the extra cake tin to the oven for the last 20 minutes of the 45 minutes baking time and build this final layer after the baking of the cake is done. Let it cool down and enjoy!
