Bite-Size Delights: Mini Brookies for Every Sweet Tooth

Brookies, the divine fusion of brownies and cookies, offer a treat that satisfies the sweet tooth. Making these delectable bites is a breeze, making them an irresistible treat!

Ingredients Brownies

50 grams of butter (3 tbsp + 2 tsp)
1 egg (about 50 grams)
75 grams of light caster sugar (¼ cup + 2 tbsp)
15 grams of cacao powder (2 tbsp)
35 grams of plain flour (3 tbsp + 1 tsp)
A pinch of salt
1 tsp of vanilla oil
70 grams of pure chocolate (¼ cup + 2 tbsp)

Ingredients cookies

50 grams of butter (3 tbsp + 2 tsp)
One small egg (about 45 grams)
80 grams of self-raising flour (½ cup)
90 grams of pure chocolate (½ cup)
50 grams of light caster sugar (0.25 cups = ¼ cup)
1 tsp of vanilla oil
A pinch of salt

How to make it?
  1. Preheat the oven to 160 degrees Celsius (320 F).
  2. To start making the brownie batter, melt the butter.
  3. Incorporate the cocoa powder into the melted butter.
  4. Whisk the sugar and salt into the butter mixture.
  5. Add the eggs and vanilla oil, beating the mixture well.
  6. Introduce the flour and mix thoroughly. Finally, add the chocolate chips and fold them into the batter.
  7. Start with mixing the butter and sugar until creamy (around 3 minutes) to make the cookie batter.
  8. Add the vanilla oil and egg, mixing well. Follow this with the self-raising flour, ensuring a consistent blend.
  9. To finish making the cookie dough, gently mix the chocolate chips into the batter.
  10. Using a piping bag, mix the brownie and cookie batter in a greased cake tin. If a piping bag isn’t available, spooning the batter alternately works just as well.
  11. Bake for 35 minutes, allowing it to cool thoroughly afterward.
  12. Once cooled, cut the brookies into small pieces.
