Homemade Red Velvet Cake Recipe

Red Velvet Cake

Ingredients

For the dough:
300 grams of self-raising flour (1 cups+ ¾ cup + 2 tbsp)
3 eggs
250 milliliters of buttermilk (¾ cup + 3 tbsp)
2 tsp of red food coloring *
15 grams of cacao powder (2 tbsp)
285 grams of granulated sugar (1 cup + ¼ cup + 1 tbsp)
15 grams of vanilla sugar (1 tbsp)
A pinch of salt
200 grams of butter at room temperature (¾ cup + 2 tbsp)
10 milliliters of lemon juice (2 tsp)

For the filling:
175 grams of butter at room temperature (¾ cup + 1 tbsp
300 grams of cream cheese (1 cups + ¼ cup + 1 tbsp)
140 grams of powdered sugar (¾ cup + 3 tbsp)
10 grams of vanilla sugar (2 tsp)

How to make it?
  1. Preheat the oven to 180°C (356°F).
  2. Mix the butter, granulated sugar, vanilla sugar, and salt in a bowl.
  3. Add eggs one by one. When the eggs are absorbed, incorporate the buttermilk, food coloring, self-raising flour, cocoa powder, and lemon juice.
  4. Grease the baking tin, add the mix, and bake for 35-40 minutes. Test with a spike whether the cake is done. If it comes out dry, you can get the cake out of the oven to let it cool down.
  5. Create cream cheese filling: melt half the butter, mix with powdered sugar and vanilla sugar, then add the remaining butter. Once that is fully mixed, add the cream cheese.
  6. Once the cake cools, cut into 3 layers. Cut a bit of the top layer to make it flat and keep the cake to decorate with it. Then, add filling between each layer. Cover the sides with the cream cheese filling and top with cake crumbles.

* A couple of tips on the coloring of the Red Velvet Cake:

  • To much cacao makes the cake turn brown and makes it hard to get that nice red colour in there.
  • For food coloring, we used a mix of drops and cacao coloring. One flower from Power Flowers Classic Red, as well as 8 drops of red food coloring. You can melt the flower and then mixed with the butter (mixed with fat, while the drops go with sugars, liquids, etc.).
