Easy Melanzane Parmigiana: A Vegetarian Italian Classic

Our Melanzane Parmigiana is a perfect dish for vegetarians. We enjoy it as a side or appetizer. You could serve this side dish next to baked potatoes or a salad, for example. Thanks to the delicious combination of eggplant and Parmesan cheese, it’s bursting with flavor.

Ingredients

2 eggplants
1 can of tomatoes (about 400 milliliters)
1 onion
2 cloves of garlic
Parmesan cheese (to taste, you can also mix it with another cheese)
1 teaspoon of oregano
1 teaspoon of bruschetta herbs

How to make it?
  1. Preheat your oven to 180 degrees Celsius(356 F) and grease an ovenproof/oven dish. You can also serve this in individual bowls if you prefer.
  2. Slice the eggplants, chop the onion into half-rings, and mince the garlic.
  3. Begin by sautéing the onions and garlic. After a few minutes, add the eggplant slices.
  4. Once the vegetables have some color, add the tomatoes and the oregano and bruschetta herbs. Let it simmer for a few minutes.
  5. Add the mixture to the greased baking dish, sprinkle some cheese on top, and bake in the oven for 15 minutes.
  6. Serve and enjoy your Melanzane Parmigiana any way you like!
